During playback, any note that doesn't have an instrument entered for it inherits its instrument from the last note that specified it, but if no note has specified an instrument, and the subsequent notes have nothing to inherit, then it defaults to instrument 00.

REQUEST:
Make playback use whatever is the currently-selected instrument in the Instruments pane as the default for notes that have nothing to inherit.

I'm the kind of guy who likes to delete his redundant instrument, volume and effect information, so it's kind of irritating to have to temporarily add something to the instrument column to hear the proper instrument when I want to begin playback partway into a frame.

Does that all make sense?

Related: If you don't actually have an instrument number 00, those notes will not play at all under this context.

Yes it is true that technically you do not need the instrument number unless you're starting playback at that specific point or changing instruments (which can be used for effect; e.g. repeating specific frames as played on different instruments without having to actually re-score them).

However, there's been an alternate proposal (which gained some interest) about what to do with instrument-less notes in a channel: make it simply change the current note pitch without retriggering the entire key-on effect (instrument volume curves, etc.) FamiTracker can't do both at the same time....

Also, just as a matter of workflow, any point where you are likely to begin playing a song should always specify instrument numbers on every channel.

IMHO, I would prefer seeing a special instrument number (FF?) set aside to explicitly inherit the previously-used instrument. Then we could do both ideas at the same time, sort of....

modusponens: Yes it makes sense and would be simple to add. I'll put it on the todo-list.

Stratelier: Regarding changing pitch without retriggering instruments, that's a different question but I have it on the todo-list as well.
