I'm not a big fan of DPCM percussion (especially how Konami abuses it), that's why I prefer to use Triangle, Sine or Square waves (mostly square waves) for percussion.

I have a hard time to imagine this song to sound good in 2A03. The only songs that could work with 2A03 are MMX1 Stage Select and maybe Flame Mammoth.

I'm sorry but I have to disagree.
Simply copy-pasting instruments to other channels will not allways work. You have to note that my cover was specifically designed to fit in N163 with 2 channels. Now the volume envelopes in Pulse 2 sound really awkward and they feel too noticeable now (including the arpeggio macros as well). Don't get me wrong, this is not terrible, but if you want to translate a song that uses many instruments (or channels) into something limited like 2A03, you have to redesign the song somehow. You have to spend more time and effort into sound design, otherwise it would be too lazy.
You also removed the Tri Kicks, now the Noise Kicks sounds weird too...

Of course. If I covered the song from scratch it'd sound better, but it'd also probably take a week to complete (I'm a slow tracker and my FT to-do list is [i]huge[/i]).

You know, I just wanted to let you know that me and Slimeball had a discussion about this recently. I honestly tried with both 11 11 0 and 12 12 0. Usually I would definitely go with 12 12 0, but there was something odd about 11 11 0 that made it sound... different... this time...
I think I'm gonna create a thread about this because I'm curious to see what people think of dissonant stuff like this.
I personally find these kind of arps fun (I believe Tim Follin used fixed detuned arps in his guitars in Silver Surfer), but if you (and others) find this annoying, you may change it to 12 12 0 if you want to. I'm still not sure if I want to keep it the way it is or not, but we'll see...

I'm partial to the MMC5 chip (mainly because you don't have to define separate instruments for it), but the arp built in to instrument 14 strikes me as weird. Never really been a fan of arps....

That's a very odd way too see things, because then there wouldn't be a reason to bother with expansion chips. In the end of day, it's about what sounds good or not, it's probably the main reason why VRC6 is such a popular choice (simple, but yet it provides extra sound). If you were making a video game specifically for NES hardware, then it would make some sense to compose the soundtrack with 2A03.
Some limitation is nice, but I just don't understand why a specific limitation would make a soundtrack better soundwise. That's why I like to sometimes compromise when it comes to what sound chip I want to use (I mostly choose N163 because I all ways tend to do something new with it). I assume it's just a matter of personal taste...

Not having to define an extra set of instruments between the core and expanded channels is a major convenience to my workflow, for one. But the only real thing I have 'against' expansion chips really is just personal taste, i.e. I never grew up on them. None of them were actually used outside the original (Japanese) Famicom; basically every NES game ever released used only the core 2A03 capabilities. And for a customizable waveform chip like the N163 specifically, that can blur the line between whether a given song is perceived as being 8-bit or 16-bit ([url=http://retrogameaudio.tumblr.com/post/59339844527/can-you-explain-what-it-means-exactly-for-music-to-be]this blog phrases it well by comparing the NES to the Amiga, both of them 8-bit systems). For example, your posted version of the Sting Chameleon song sounds awesome by all accounts, I just recognize that the organ instruments aren't something you can create with the basic pulse waves and I sort of miss that.
