I'm somewhat new to FamiTracker, and I've already cover a few songs, mostly from GameBoy games, just to get used to covering songs by ear.
I'd like to practice using the effect commands more, but I don't want it to be overwhelming. Just so I can become familiar with each effect and getting things just right. I've covered a few songs from Pokemon and Link's Awakening, songs where the effect use is minimal. I don't care what it is, I don't want to dive into something I can't finish.
EDIT: Also, I've been covering these songs without the use of an NSF/GBS player, or whatever. Put it simple, I've been doing these straight from YouTube videos, which can be VERY unreliable, I know. If anyone can tell me where I can find a good GBS player and GBS files, It would make my life that much easier.
Try covering songs that have real instruments, or at least aren't just square waves. Figuring out how to make beeps and boops sound vaguely like the instruments they're supposed to represent in the song taught me a lot!
If you look towards SNES / Genesis stuff, you can still dissect the song track by track, if need be.
I get practically all my emulated game music at [url=http://zophar.net]zophar.net. For anything before GBA, PS1, etc, I wrote a function-around-a-library that will spit wave files of each channel individually (last link in my signature). That really helped in covering songs that were harder to follow strictly by ear. (I personally find by-ear covering mentally tiring. Maybe I've been spoiled by my own work.) Even without wanting to split the channels without listening to it, Zophar has a decent list of players for each sound format.
(Also, what Gamma said. Start covering things outside your comfort zone - it'll force you to get familiar with the program and its documentation. I noticed a lot of self-improvement when I started - and wound up finishing - a cover that I thought was going to be too difficult.)

If you're just looking for an excuse to practice using effects, the easy answer is Mega Man covers. Overdone? Definitely, but there's a bevy of fun discoveries to be had, and they'll certainly keep you busy with effects. :P No DPCM practice, though.
