I think part of the challenge in working with the VRC7 is the fact that you can't go bonkers with custom FM instruments like you can with the YM2612 for instance: while you can define an unlimited amount of instruments, you're stuck with using just one of them at a time, so you really need to learn how to get the most out of the default instruments.
As for MML, like gyms said ppMCK integrates a lot of cool time-savers into the language so even if you didn't really like making SNES music with it, I'd say definitely give ppMCK a go. MMLShare really is the place to do so.
Thanks for the info, jrlepage. I wasn't aware that you could only do one custom instrument at a time in VRC7. And it's only 2 OP! The range of sounds that it can produce is pretty impressive, still.
I'll look into ppMCK and MMLShare...who knows, I might get into it if it's not such a pain.
