So as I was checking the site on my iPod Touch and thought "there should really be a Famitracker app".

ImpulseTracker has been ported to the Wii, under the name SchismTracker.
I'm not very knowledgeable about licences and stuff, but would the one under which FamiTracker is published allow an independent developer to publish a port of FT for the iPhone and/or Wii? I'm assuming that wouldn't be possible because they'd have to release the source code along with the project, but still, I wonder...

Why would that be a problem?
Seeing that FamiTracker's released under the GNU GPL, there should be no problem whatsoever to stop anyone from porting it to different platforms.
This said, making source code freely available to the general public typically involves consensus between the original programmer & the derivative programmer if a third party is involved (for example, if Apple has any say with regards to how software is to be distributed by whoever will port FamiTracker to the iPhone platform).

After doing some searching, I've seen a few free-software iOS apps being distributed through iTunes. Notably, [url=http://ios.wordpress.org/]WordPress's iPhone app is GPL-licensed, so there's precedent on that.
While I think this would be cool, it'd need its own dedicated developer, and a fair amount of porting to turn Windows-specific code into iOS-specific (or some kind of in-between) code.
