Hey, I want to do some covers, but I'm not sure what to use. For NES I need something like a mix between the speed and ease of control that Nestopia has, the accuracy that FCEUX has, and some things that only Mario NES type emulators have.
SNES, I need something better than ZSNES. I need to be able to listen to the music at full speed while playing SNES to go the best sound.
DOS, I need something better than DOSBox 0.74.
Maybe you should start collecting them then, they're a LOT more helpful, and more practical than ROMs when it comes to covering music.
But as far as emulation and ROMs go, it probably isn't the smartest idea talking about it here. Just try out NSFs, splitting channels once again, helps out alot.

Actually, for DOS, I'd use QEmu for Windows with the help of VMware Disk Mount & RDPSoftware's Disk Mount front-end. I can send you the files, but you'd have to supply your own DOS boot disk images.
However, I personally haven't seen anything better in terms of FCEUX or Nestopia when it cones to NES ROMs.
There is SNES9X or SNESGT if you're looking for something better than ZSNES (as much as I personally prefer ZSNES over them).
But you know what; Mex is right when it comes to using a dedicated sound file player. The emulators are good to have if you have the ROMs, but Zophar's Domain not only has a good emulator collection; it also has a music collection (including Super NES, NES & other consoles).
As for a sound file player, you can use all the WinAmp plug-ins you can think of, or use AudioOverload for Windows (a sound file player that supports almost every format you can think of).

Then you might as well stick to what you have already. SNES9X & SNESGT have sound file support. QEmu, on the other hand, is nothing more than a simple computer emulator; if you find DOSBox easier to use, then stick with it.
It's all a matter of taste, really. And quite frankly, nothing beats the original hardware.
(This is coming from a guy with an NES, Atari 2600, Commodore 64 & Toshiba T1200 PC XT laptop, all of which are still in working condition.)

I have a DOS program that writes SPC data and rips samples to an .it file for use with a tracker like ModPlug. It's called OPENSPC. It's been very helpful in covering SNES game music.
