I would like a custom VRC7 grand piano, because it just takes way too much stretching to call any of the built-ins a piano.

You could always make one with the custom patch (#0)...

Yes, the custom patch would be the way to go.

I got this (see attachment) after messing a bit with the VRC7 modulators - I've never done it before so it might use improvement, you could use it as a start nevertheless.

A piano sound will be difficult to achieve with 2 FM operators and limited choice of waveforms. I've heard a few Genesis/MegaDrive tunes with decent piano sound, but that uses 4 operators.
