Yes it will have a hiss. Believe me, it's not that bad on the real chip.
You might want to make the N163 a tiny bit quieter since the mixing is a little different on real hardware (the N163 is a bit louder than the 2A03)
Still good, but I can't help feeling that it's still lacking much of the depth in the original (the vocals had harmony in the original, there were a bunch of synths that I can't hear in here, and there was a soft but distinct bass).
A N163+VRC7 would create more channels for the synths, yes, but if I were in your position then I would rather make either a very limited module with, say, VRC6, or a full-blown OPL4 cover or a sample-based XM/IT module. While sometimes it is nice to have limitations, some songs just don't handle them very well, and if the limitations already downgrade them so much, why not go all the way?
Of course, the above is my opinion and everyone is subject to their own.

This 0.4.2 build, among other things, will playback N163 modules without aliasing hiss.
